Why does my brain turn off when I have to pick between der/die/das in a sentence?

I’ve been learning German for three months now, but I still feel like I’m guessing every time I write. I understand the rules on paper, but the moment I try to speak, I freeze up because I'm terrified of getting the adjective endings wrong or picking the wrong case. How do you all get past this mental block when you're forming sentences?
